Ingredients

  • 1 lb ground turkey or beef (or a 50/50 blend for balance)
  • ¼ cup finely grated zucchini (moisture + veggie boost)
  • ¼ cup finely minced onion (flavor and moisture)
  • ⅓ cup breadcrumbs or GF Panko (binder)
  • 1 egg
  • 2 tbsp grated parmesan
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • (Optional for depth): 1 tsp tomato paste or a dash of Worcestershire sauce

Instructions

  1. Preheat oven to 400°F.
  2. In a bowl, mix all ingredients just until combined.
  3. Form 1-inch balls and place on a lined baking sheet.
  4. Bake for 15–18 min, or pan-cook in olive oil for 6–8 min, turning to brown.
  5. Cool and freeze extras for later.
